Fluke or flounder, ~6 Fillet
2 bunches Collard greens, finely chopped
Garlic, peeled and finely chopped
1. Rinse and dry kale, remove the stems and fine chop. Saute the garlic until light brown and add kale until tender.
2. Heat a non-stick frying pan with olive oil to medium heat. Season the breadcrumbs with a pinch of salt, pepper and parsley, drag the fish through the eggs wash then on to the breadcrumbs.
3. Fry the fish on one side for 2-3 minutes until light golden brown, then turn over side for 2-3 minutes.
4. Remove fish, plate, and serve immediately.
